INSTRUCTIONS: (USING BREW BAG)
- Open brew bag and place elderberries inside.
- Add entire spice packet into the bag and tie loosely.
- Place bag and cinnamon stick into saucepan and add 4 cups water.
- Bring to a boil, then reduce to low simmer.
- Simmer uncovered 30-45 minutes until liquid reduces by about half. Remove from heat.
- Pull out the bag careful with tongs or a slotted spoon and set in a bowl to cool a few minutes. Remove the cinnamon stick and discard.
- Using rubber gloves, squeeze the bag gently until all liquid is extracted.
- Discard bag, or dump berries out and rinse the bag to reuse. Add extracted liquid back into saucepan.
- Allow liquid to cool until warm (not hot).
- Stir in ¾ cup raw honey.
- Store in glass jar in refrigerator up to 4 weeks.
For an added boost, use LOCAL raw honey from your area- the closest to your home the better. The bees collect pollen from local plants and your honey may contain traces of that pollen, which some people find helpful for seasonal allergies. It’s a perfect compliment to the natural goodness of your elderberry syrup.
